BONITA SPRINGS, Fla. (Jan. 14, 2020) – Shangri-La Springs, a historic property in downtown Bonita Springs, has added dinner and Happy Hour service Thursday to Saturday at Harvest & Wisdom, the property’s farm-to-table restaurant specializing in fresh, organic cuisine. The restaurant has been open for lunch Tuesday-Saturday since mid-July.
The dinner experience offers five-course, seven-course, and full-chef experience tasting menus of seasonal artisan dishes featuring ingredients just-picked from the property’s organic, no-till garden; grass fed, pastured-raised protein delivered from nearby Circle C Farm; and organic spices expertly crafted into innovative and delectable dishes. The tasting menu, which will change to reflect the freshest ingredients, highlight a variety of unique organic dishes such as pork middlins with pork cheeks, bitter lettuce and trotter jus; carrot and beet tartare with artisan bread, caper vinaigrette and mango “yolk”; superfood salad with lentil sprouts, kombucha and garden greens; heirloom carrots with goat milk yogurt, tea-soaked raisins, puffed grains and harissa; and lobster causa featuring aji amarillo, chilled potato and puffed rice. Vegetarian and vegan items are always available, as well as enhancements for an additional charge including shaved truffle, smoked venison, sustainable kaluga caviar, snapper, hand crafted butter with Andalusian bread and dessert. An a la carte menu of small plates and wine, beer and sake cocktails is available in the lounge, with happy hour price specials from 4 to 6 p.m.
The five-course menu is $58, seven-course dinner is $72 and full-chef experience is $120, all including gratuity. An optional beverage pairing by the sommelier is available for $40 for the five-course tasting, $75 for the seven-course tasting and $100 for the chef experience. A la carte selections priced by the glass or bottle from the wine list are also available.
The unique menu offerings fit into Harvest & Wisdom’s mission to be responsible by offering portions sized to allow guests to try many dishes and feel nourished and satisfied without waste.
“We offer a variety of dishes that feature the incredible produce harvested daily from our garden, creating combinations that honor that bounty by using great techniques and balanced seasoning,” said Executive Chef Allen Fisher. “The tasting menu is a way for our guests to experience a variety of dishes unique to south Florida.”
Culinary creations are led by Michelin-starred Fisher, competitor on Food Network’s Chopped, who brings more than 18 years of professional cooking and kitchen management experience including with famed chef Daniel Boulud in New York, and an extensive background of developing new concepts using local and organic products. Chef Allen is also a certified sommelier, hand selecting wines for the property.
Chef de Cuisine David Robbins works with Fisher on menu collaboration, staff selection and training, and selecting key ingredients. Robbins comes to Harvest & Wisdom with more than 15 years of professional experience including time with Chef Dan Barber at the acclaimed farm-to-table concept Blue Hill at Stone Barns in Tarrytown.
“Guests who have joined us for lunch since our opening in mid-July, have repeatedly inquired about dinner service,” said Fisher. “We are excited to announce we are expanding the availability of our organic creations to dinner service.”
The 86-seat restaurant has 44 seats inside and 42 more on the outdoor terrace. Up to 16-seat private dining is available for intimate occasions and events. Harvest & Wisdom’s chefs can design custom menus, from light refreshments to full-course dinners. Special dietary requests are welcomed including gluten-free, vegetarian and vegan. Harvest & Wisdom at Shangri-La Springs is open Tuesdays-Saturday for lunch 11 a.m. to 3 p.m. Thursdays-Saturday, Happy Hour is from 4 to 6 p.m. in the lounge with beer, wine and lite bites, and dinner in the dining room and outdoor terrace from 5 to 9 p.m.
